Sauteed Runner Beans with Garlic Butter and Lemon Zest

Ingredients

  • 300g (about 10 oz) fresh runner beans, trimmed and sliced on the diagonal

  • 1 tablespoon unsalted butter

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • Zest of 1 lemon

  • Salt and freshly ground black pepper, to taste

  • Optional: toasted almonds or grated Parmesan for garnish

Directions

  1. Bring a medium pot of salted water to a boil. Add runner beans and blanch for 3–4 minutes until bright green and just tender. Drain and set aside.

  2. In a large skillet over medium heat, add olive oil and butter.

  3. Add garlic and sauté for 30 seconds until fragrant but not browned.

  4. Add the blanched runner beans and toss to coat. Cook for 2–3 minutes until warmed through and glossy.

  5. Season with salt, pepper, and lemon zest. Toss again.

  6. Serve warm, optionally topped with toasted almonds or a sprinkle of Parmesan.
