Gooseberry Crumble with Vanilla Custard

Ingredients

    • 500g fresh gooseberries, topped and tailed

    • 100g granulated sugar

    • 1 tablespoon cornflour

    • Zest of 1 lemon

    • 100g cold unsalted butter, cubed

    • 75g light brown sugar

    • 25g rolled oats

    • Pinch of salt

    Directions

    1. Preheat oven to 180°C (350°F).

    2. In a large bowl, mix gooseberries with sugar, cornflour, and lemon zest. Transfer to a baking dish.

    3. In another bowl, rub butter into flour with fingertips until it resembles coarse breadcrumbs. Stir in sugar, oats, and a pinch of salt.

    4. Spoon crumble mixture evenly over the gooseberries.

    5. Bake for 35–40 minutes until the topping is golden and the filling is bubbling.

    6. Let cool slightly, then serve with custard or cream.
